Grandma, now 90 years old, is known in the family for her tasty and nutritious soups. Very simple, and with just a few ingredients, she is able to produce something that looks, smells and tastes delicious and is so nurturing. Her lentil soup is my personal favourite.
Recently, I was in her kitchen when she made this – she was having a busy day so wanted to make something quick and easy. The result was delicious.
What you’ll need:
• ½ an onion – finely chopped
• 1 clove of garlic, finely chopped – optional
• 1 tin of chopped Tomatoes
• ½ carrot, chopped finely or grated
• Olive Oil, or other oil.
• salt and pepper
Fry the onion, garlic and carrot in a little oil until it begins to soften. Add the tomatoes and cook gently for 20 minutes. Whizz it up with a blender, or you might prefer to leave the bits in! Add salt and pepper to taste, and any fresh or dried herbs that you fancy. You can also add a dollop of yoghurt or crème fraiche (Grandpa likes to add cream!) or even grated cheese.
Really versatile, this soup also goes well with pasta – you might want to let it cook for longer so that it thickens.
