A Creative Space… with beetroot

Here’s a short article that will hopefully encourage us to get creative when the mood takes us!

I love beetroot and, most weeks can be found boiling and peeling a pile of fresh beetroot that will then be used in all sorts of culinary delights.

That’s all I’ve really done with beetroot. Until last week that is, when I had an urge to make some beetroot relish.

I found a recipe on the Riverford website and got cracking.  My usual way of making food stuff is to attack it with a vengeance. No idea why, I just seem to rush.

Not this time though. I cleared the kitchen of people, selected my favourite music and took a slow deep breath.

I then then mindfully and gracefully gathered all of the ingredients and utensils and proceeded to chop, slice, weigh, stir, boil, simmer, season and taste until, a few hours later, I had produced several jars of the most delicious beetroot relish!

During the process I was aware of the incredible smells that filled the house – cinnamon, nutmeg, onions, apple, and of course the beetroot itself.  I like to imagine that people walking past our house would take an appreciative sniff and maybe take in some teeny molecules of goodness.

Apparently, this particular relish is best left in a dark space for a month, but I’m not sure any of the jars will survive that long.

I’m planning to do more of this type of thing, making foodie things for pleasure rather than the usual necessity.

I can find the time, it’s good for my heart and soul (and my microbiome of course) and others get pleasure from it as well.

Of course, it might not be your thing but if you’re not sure if that’s true why not give it a whirl. You’ll be amazed at how enjoyable it can be!

Of course, it would be quicker, and maybe tastier and even cheaper to buy beetroot relish from the supermarket. But that would be denying myself the opportunity to be in a lovely creative space for a while.

And that’s what I want more of.
