A traditional tomato sauce that is the Mediterranean version of the French ratatouille. This tasty sauce can be used in any way you choose and is packed with nutritious goodness.
What you’ll need:
• 1 red Chilli
• 2 Red Peppers
• 4-8 Tomatoes
• 4 Shallots, peeled0
• 2 Garlic Cloves, peeled
• 3 Tbsp Olive Oil
• 2 Tbsp Chopped Parsley (or sage, or basil, or oregano)
Deseed Chilli and Pepper
Dice peppers and tomatoes to 1cm cubes
Finely chop shallot, garlic and chilli
Fry shallot, garlic and chilli in olive oil over high heat until soft but not brown
Add the tomato and peppers and continue to fry gently for 2-4 minutes
Top with chopped parsley (or other herbs).
